We have decided to build a section of our favorite recipes using bison.  We hope that you enjoy them. Please make necessary changes as you see fit, like cutting back on breadcrumbs, adjusting spices or eliminating sugar. 

We are starting out with just a few but will be adding more over time. We also will be taking photos of the completed dishes! 

Mongolian Bison – Slow cooker

1 ½ – 2 lb Bison flank steak, sliced thin across the bias
1 T Crushed Peppercorn & Garlic Rub (Can be mixed ahead of time and saved for future)
½ Cup Pomegranate juice and balsamic vinegar mixed
1 inch piece of ginger root, peeled and grated/minced
3 green onions, chopped (Save some to sprinkle on top)
2 T olive oil
½ cup honey
½ cup shredded carrots or 1 medium carrot, julienned
¼ cup arrowroot or tapioca powder (or corn starch)
½ cup coconut aminos (or soy sauce)

Mix all ingredients together in crock pot (or in a freezer bag for future)
Turn on low for 6-8 hours or high for 4 hours
Serve over jasmine rice or riced cauliflower with some green onion sprinkled on top.

 

Bison Chili

2-3 lbs of ground bison
1 can black beans – drained
2 medium onions – diced
1qt tomato sauce
1 small can tomato paste 
1 t Salt
1 t Pepper
1 T Paprika
2 T Cumin
2 T Chile Powder
1 t Thyme 
2 t cocoa powder 

Saute onions in a little oil 
Add Meat and cook about ½ – ¾ done 
Add Spices and cook until fragrant 1-2 min
Add Tomato Paste and mix in
Add Sauce, tomatoes and beans.
Stir 
Add water or broth if needed to boil off as it simmers
Bring to a low boil and turn down to simmer for 1 -2 hours or longer if time allows.
Add more spices to taste

Super Bison Meat Loaf

6 oz garlic bread crumbs
½ t ground black pepper 
½ t ground cayenne pepper
1 t Chile Powder 
1 t ground thyme
1 ½ t salt
1 med yellow onion
2 med carrots 
3 cloves garlic
1 red bell pepper
2 ½ lbs ground bison
1 egg

GLAZE 
1 Cup ketchup
2 T ground cumin 
2 dash Worcester Sauce 
2 Dash Tabasco
2 T Honey

Preheat oven to 325o
In food processor, grind bread crumbs, black pepper, cayenne pepper, Chile Powder, Thyme & Salt until fine and set aside in a large bowl
In food processor chop onion carrots, garlic and bell pepper until fine and mix with dry ingredients. 
Add meat to bowl and combine gently
Add egg to bowl and combine thoroughly
Pack mixture tightly into loaf pan and flip over onto a lined baking sheet
Remove loaf pan and bake for 10 minutes
After 10 minutes glaze loaf and bake until internal temperature reads 155o (approx 45 minutes)
